The Queen Mother. Triger is a supremely elegant lady who still thinks like a butcher. This is an authentic modern steakhouse that focuses on paying homage to the entire animal – from nose to tail. The concept is short and simple: when the meat’s good enough, it doesn’t need much decoration, just expert grilling. We caramelize it a la plancha at a high temperature, to sear the edges and seal in all that juicy flavor. The kitchen’s open, the fire is ablaze, the meat is always front and center.

We care deeply about our ingredients: we butcher and age the meat ourselves, and source top-quality vegetables from local farmers. So it’s only natural to put the spotlight on them. Our excellent cuts of meat are precisely grilled and caramelized a la plancha, then served in a minimalist format that gives the flavors time to shine. Of course, they’re accompanied by the perfect fries, classic French-style mashed potatoes, or seasonal vegetables in a mustard vinaigrette. Add a Triger’s Sour over bourbon, or a glass of local red wine, and you really don’t need anything else.
