Pull back a velvet curtain on Triger’s lower floor and you’ll uncover a portal to another world, where time flows differently and even the laws of gravity no longer apply. This is Rouge, a secret space where, once again, meat and alcohol take center stage. Around them, we have built the most fitting decor: marble bar, wooden walls, atmospheric lighting, and warm, immersive sound. The dishes are small and perfectly formed. The drinks are exceptional. The music is exactly what we like. Rouge is open four times a week and there are only 26 seats to keep things intimate.

Rouge’s food presents a fusion of French cooking techniques and Chef Nissan’s romantic memories of Tokyo. Each dish on the menu is uniquely beautiful, precisely balancing the Triger Group’s local ingredients with inspiration from distant lands. Denver nigiri aged for sixty days, served with tare sourdough and yuzu koshō. Meat gyoza with scallions and ginger in a yuzu demi-glace. Or how about king oyster mushrooms, sake butter, soy, and burnt ginger. Flavors of nostalgia, mingling with our favorite drinks from the here and now.
